Texas Style Fajitas |

In
Central Texas, fajitas are a staple food. Fajitas are great for
camping, outdoor grilling, or any night when you want to make a simple and
delicious dish.

| Ingredients: |
Marinade:
1/2 cup worcestershire sauce
1 tblsp chopped fresh garlic
1 lime
1 tsp tabasco
1/2 cup chopped cilantro
salt and pepper
flour tortillas
3 lbs. skirt steak |

| Instructions: |
Salt and pepper the skirt
steak. Place steak in shallow casserole dish or zip lock bag.
Add the worcestershire, garlic, tabasco, and cilantro to the steak. Cut
the lime into quarters and squeeze juice on the steak; add the squeezed
lime quarters too (why not?). Mix well. Let skirt steak
marinate as long as you can. Overnight does well. Make sure the grill is
good and hot. Place marinated skirt steak on hot grill and cook. About 10
minutes per side.
Cut fajitas into strips and serve with warmed tortillas, grilled veggies
and fresh pico. |
